Nutrition per portion

Ingredients
  • 1/2 cup quinoa
  • 1/2 cup almond milk
  • 1/4 cup water
  • 1/2 Tbsp.olive oil
  • 1 clove garlic minced
  • 1/4 cup chopped white onion
  • 1/4 can black beans, rinsed/drained
  • 1 Tbsp raw pumpkin seeds
  • 1/2 Tbsp.olive oil
  • 1/4 tsp. Mrs Dash fiesta lime seasoning
  • 1 egg
  • 1 cup spinach
  • 1/2 cup sliced grape tomatoes
  • 1/4 avocado cubed
  • 1/4 cup chopped cucumber
  • cilantro to garnish
  • 1/2 lime
Method
  1. Cook quinoa to instructions on package using almond milk + water (usually about 15 minutes or until water is absorbed)
  2. While quinoa is cooking, warm oil + minced garlic in pan
  3. Cook white onion + black beans in pan on medium heat for 5 minutes
  4. In another pan warm oil + add pumpkin seeds + Mrs. Dash fiesta over medium heat for 5 minutes (or until seeds start to lightly brown)
  5. Start to assemble bowl with spinach, grape tomato, avocado, quinoa, + black bean/onion mix
  6. Cook egg to liking
  7. Top bowl with roasted pumpkin seeds, egg + cilantro to garnish
  8. Use citrus squeezer to squeeze 1/2 lime juice on top
