Healthy & Festive 4th of July Recipes!

With 4th of July upon us we begin to face so the BBQ’s that are filled with hot dogs, ice cream, and every overly processed dessert you can think of. We tend to aim for these treats because they’re EASY. If you have a party to go to this weekend, consider making one of these three recipes, as they’re all simple, healthy (or at least healthier) and will bring some festive fun to your event!

1) Berry Trifle

This first dish was made using a recipe from skinnytaste.com. This recipe is so simple and there is NO cooking involved! This dessert would make a great center piece for any party display.

2) Red White & Blue Kabobs 

The next dessert couldn’t be any simpler. You can get kabob skewers at most grocery stores. Simply cut strawberries into small pieces and pierce those onto the skewer along with blueberries and mini marshmallows. These are boyfriend tested approved! (my boyfriend tasted them and loved the combination together)

3) Very Berry Muffin

This last recipe is a simple ingredient muffin from weelicious.com. The ingredients are all pretty straightforward, which is what I love about it. Except in my recipe I used fresh fruit instead of frozen, and while it was a bit messier, it was not catastrophic! To spruce these muffins up a bit more I wanted to add a frosting that was a bit healthier, so I made up my own. The yogurt taste goes along nicely with the fruit in the muffin. These measurements aren’t exact, I just played around until I reached a consistency that I liked:

Greek Yogurt Frosting:

-1 package plain greek yogurt

-1/3 cup sugar

-1 tsp. vanilla extract

-1 cup true whip

-1 tbsp cream cheese
